Recently, I visited Rosemary, a good friend of mine, in Santa Barbara, CA. Since she has Lymphoma, the doctors prefer her not to have any kind of sugar. She can’t even have fruit! But she is able to have stevia and xylitol.
On my trip, I had to create some new chocolate stevia recipes for her to enjoy. And she did! We got to sit on the apartment balcony and sip on a chocolate smoothie while watching the sail boats gracefully dance on the ocean.

Sugarless Chocolate Shake
1 cup coconut milk
1/3 cup cashews, raw
1 1/2 tsp of stevia
dash of vanilla
1 tablespoon of cocoa
1 tablespoon chia seeds
9 medium ice cubes
First, blend the coconut milk, cashews, stevia, vanilla, and chocolate. Then, add the ice and blend on high until smooth. Use more coconut milk powder for a creamier consistency. Serves 1-2
Almond Mocha Smoothie
3/4 cup almonds, raw
1/2 small avocado
dash of vanilla
2 tablespoon of cocoa
2 teaspoons stevia or other sugar-free sweetener
12 ice cubes
1 tablespoon chia seeds
2 cups of chilled coffee or premade Teeccino Mocha flavored
Blend the nuts and avocado with the water until smooth. Then add the rest of the ingredients and blend again. Serves 1-3
Chocolate Cashew Dream
1/4 cup cashews, raw
1/4 avocado, large
1 tablespoon of raw cacao
1/4 cup coconut milk powder
2 tsp stevia or other sugar-free sweetener
1 cup water
11 ice cubes
Blend the nuts and avocado with the water until smooth. Then add the rest of the ingredients and blend again. Serves 1-2
Chocolate Almond Smoothie
1/4 cup almonds, raw
1/3 avocado, medium 1 1/2 tablespoon of raw cacao
1 1/2 tsp stevia or other sugar-free sweetener
1 1/3 cup water
10 ice cubes
Blend the nuts and avocado with the water until smooth. Then add the rest of the ingredients and blend again. Serves 1-2
